I’m not an expert, but I’ve never heard of porters in Patagonia (mules maybe), you might have to carry your gear yourself. You can probably find a guide quite easily, but again, you don’t really need one for Paine as the treks are quite well marked (even if they are not always well maintained). I’ve never been to Fitz Roy though.
